But what exactly is racking, and why does it matter?
What Is Racking?
Racking is the process of transferring wine from one vessel to another, typically from a fermentation tank or barrel into a clean container. The goal? To separate the clear wine from the sediment (or lees) that naturally forms during fermentation and aging.
This sediment consists of dead yeast cells, grape solids, tartrates, and other particles that settle at the bottom of the vessel. While lees can contribute desirable textures and flavours in some cases, excessive contact can lead to off-notes or unwanted haze.
Why Do We Rack Wine?
At Post House Wines, we believe in letting the wine speak for itself. We don’t fine or filter our wines—instead, we use traditional, low-intervention methods like racking to naturally clarify and refine the wine.
Here are the core benefits of racking:
- 🍷 Clarification: Removing sediment makes the wine visually clearer without stripping it of its soul.
- 🍇 Purity of Flavour: Sediment can cause bitterness or unwanted flavours. Racking helps maintain the wine’s intended profile.
- 🌬 Oxygen Exposure: Gentle exposure to oxygen during racking can help soften harsh tannins and enhance aroma development.
- 🧼 Hygiene: Regular racking keeps the wine away from potential spoilage organisms that may be present in the sediment.
How Often Is Racking Done?
Wines may be racked several times throughout their maturation. The first racking usually takes place shortly after fermentation is complete. Subsequent rackings depend on the style of wine and the winemaker’s intuition—often two to three times before bottling.
For example, a robust red wine like our Blueish Black or Merry Widow may benefit from additional time on the lees for texture but will still undergo racking to maintain balance and structure.
