January sees the vines in full summer strength:

  • Shoots are long
  • Berries are developing flavour and colour

Our focus is balance — ensuring enough leaf cover for photosynthesis without shading the fruit. Too much vigour equals diluted flavour. Too little canopy equals stress.

This is where our “marginal” soils shine: they naturally limit excessive growth, keeping the vines in check and the fruit concentrated.

Inside each grape, sugars are rising, acids are adjusting, and flavour compounds are building.
